Living somewhere in between rose and red wine, our chillable merlot is made in a style well-known in southern France and the Beaujolais. The process is called carbonic maceration, not to be confused with carbonated. There are no bubbles here; carbonic maceration means that the grapes are not pressed at first, but fermented whole cluster, in a tank without oxygen, just carbon dioxide. Technicalities aside, you’ll find a very crushable, drinkable, juicy dark rose that the French would call glou-glou. We taste red cherries, Hi C fruit punch, and fun.
